Gratitude is key. 3 things that make me happy.

So much hardship and difficulty surround us on many levels. Even when you try to keep your distance for a while, it only takes a click on the telly remote and you find yourself in the middle of conflicts and war.

Don’t get me wrong. I don’t believe we should ignore the facts or not engage ourselves. On the contrary. But in order to participate in a way that makes sense in your life a balanced approach is beneficiial. It’s a privileged approach, I know. And this where gratitude plays a role.

Cinnamon buns

My Swedish  Cinnamon Buns  (40 buns)

Ingredients

Dough

½ liter milk

125 gram butter (real butter, not margarine)

50 gram yeast

1 dl sugar

1½ liter all-purpose flour

¼ teaspoon salt

Remonce

180 g of softened butter (not melted)

1 ¼ dl granulated sugar

Ground cinnamon (or vanilla and saffron)

Decoration

Swedish pearl sugar or sugar sprinkles of your choice

Instructions

Dough

Melt the 180 g of butter in a small saucepan. Add the ½ liter milk to the melted butter. Be aware that the temperature should not exceed 37C. Crumble the 50 gram of yeast in a large bowl and add the poor the butter/milk over the yeast. Stir until the yeast is dissolved. Add all the dry ingredients and knead the dough for a while. Leave the dough to rest for 30 minutes under a tea towel. Divide the dough into two portions once it’s raised and roll dough out with a rolling pin.

Remonce

Mix the 180 g of softened butter, the 1 ¼ dl of granulated sugar and the cinnamon and spread the remonce on top of the dough. Fold the dough twice into three layers and divide it into 20 pieces. Each piece should be twisted several times. By the end tie a knot of the twisted piece of dough and put it on a heat proof baking sheet or plate. Repeat with second portion of dough. Proceed until you have a total of 40 buns.

Make the buns rest for another 30 minutes under a tea towel and brush the knots with egg and sprinkle Swedish pearl sugar on top of them.

Bake the buns for approximately 8 minutes in the  middle of a preheated oven at 225C.

Copenhagen I’ve missed you

Do you have a particular place that you love a little bit more than elsewhere? A happy place where you feel at home and where you enjoy life the most?

One of my ultimate cherished places is Copenhagen, where I lived for many years before moving to Sweden in 2006. I studied there, fell in love with my hubby there, we got our two oldest children there and we evolved in many aspects there. Best time, really.

Less stuff & more happiness 🌱

It has been on my mind for as long as I’ve had kids, but it wasn’t until a couple of years back that I decided to do something about all the things that piled up as soon as I had turned my back on it.

The stuff blocked my access to a happy, fulfilled life and I just felt that I spent all my free time cleaning, clearing and moaning about all the practical chores that had to be done as soon as I came home from work.

Cosy days in Spain

If you have read my previous posts the last weeks, you may have noticed that my family and I are spending time away from home right now. You may also have seen that our holidays haven’t turned out the way we hoped for. Initially we had planned 3 weeks in Morocco and and one in Andalucia in the southern part of Spain, but due to my husband’s decease that has its ups and downs, we had to leave Morocco two weeks earlier than planned.

Morocco - hygge away from home

I’ve really looked forward to time off with the family this year. Nothing beats those precious moments with the little people in my life. Well, actually they’re not that small anymore. 

My husband has Moroccan background, but has lived in Denmark since the age of 6 and he is in many ways more Danish than I am. But the roots are undeniable. We’ve travelled to Morocco several times since we became parents for the first time almost 18 years ago.
