Just wanted to share our all time favourite pancake recipe. I find home made dough to be the best - and it actually doesn't take long to mix it anyway.
American pancakes are such a great alternative to waffles and the ordinary crepes, and as some of the kids in our family don't like waffles and the other ones don't like crepes, this alternative is sent from heaven and I haven't received any complaints so far!
This is all you need to do if you are 4 persons at the table:
2½ dl milk
2½ dl wheat flour
½ tea spoon salt
1 tea spoon baking powder
Butter or cocnut oil
Mix the flour, sugar, salt and baking powder in a bowl and add milk and eggs yolks to the dry ingredients. Whip the dough thouroughly.
Beat the egg whites away in a seperate bowl until they get white and fluffy. The egg whites are ready when you can turn the bowl upside down and they stay put.
Gently fold the beaten egg whites into the dough. Now it's time to cook the pancakes
Grease a nonstick pan with butter or coconut oil and cook the pancakes gently at both sides.
You could serve the pancakes with fresh fruit, berries jam or syrup. Or all of it if it's Sunday!
